Tempting Tuesdays ~ Grinch Cookies


December is finally here! I am so excited to try out some great Christmas recipes. This first one has been around for a while, but this was my first try at making these green monsters. This version is courtesy of The Hungry Dudes.

Ingredients

1 pouch of Betty Crocker Sugar Cookie Mix (1 pound 1.5 ounces)
1/2 cup butter or margarine, softened
1/2 teaspoon of mint extract
8 drops of green food coloring
1 egg
1 package of Andes mints
1 cup of semisweet chocolate chips


Heat oven to 350 degrees. In a large bowl, combine sugar cookie mix, butter, mint extract, food coloring and egg.


Chop up your Andes mints and add with chocolate chips to your cookie mix.


Mix together well. Dough will be sticky.


Drop by the spoonful on to a greased cookie sheet and bake for 10 minutes or until they are set. Mine took about 13 minutes. The original recipe says this makes 2 dozen, but I was able to get 3 dozen out of it.

These pictures really don't show the green coloring well, but they turned out a shade or two lighter green than the dough. Next time I will add a few more drops of food coloring.





They are delicious. A great way to jazz up the usual chocolate chip recipe.
