Tempting Tuesdays ~ Oven Baked Chicken Parmesan

I'm twisting the traditional once again. This take on the classic Chicken Parmesan will take you only 30 minutes to put on your dinner table and feed the hungry brood you have waiting for it.

Ingredients

4 boneless, skinless chicken breast halves
1/2 cup of mayonnaise (you can substitute with sour cream or low-fat plain yogurt)
1/4 cup grated
Parmesan cheese
4 Tablespoons of Italian seasoned dry bread crumbs

Mix mayonnaise and Parmesan cheese together.

Arrange chicken in a 9x13 in pan.

Spread mayonnaise and Parmesan mixture over each piece of chicken.

Sprinkle 1 Tablespoon of breadcrumbs over each piece of chicken.

Bake for 20 minute at 425 degrees.

I served this with a slice of Garlic Texas toast. Add your favorite veggies for a complete meal in just a half hour.

Writing & Publishing Tips

It's All About Perspective...

…And yours is probably pretty screwed up.

But no worries, you’re not alone. So is mine.

This might read like some what of a rant, but here we go…

At some point in time, throughout life, all of us will pass judgement on someone else. Every single one of us. Yes, that includes you. Even if you claim to be the most nonjudgemental person in the world, at some point you WILL pass a judgement on another person. Even if that judgement is you assuming that person to be too judgemental.

This is really okay. Judgements are based upon opinions, standards, morals, and how we were raised. But, most importantly I believe judgements are based upon perspective.

Wherever you happen to be in your adventure of life is going to greatly affect how you see the world.
Whether you are highly successful in your endeavors, or dangling at the end of a very short rope. Your placement in the world, society, and life will create your view.

I’m sure we all have had many people come into our lives who assume that they know much about what transpires in our day-to-day activities. And I must say that 95% of the time, their perspective is either warped, misunderstood, or just blatantly false. But rather than lash out or defend ourselves, as much as we all love to blame people for being wrong about their assumptions, let’s take a moment instead to look at it from their perspective. After all, it’s them not having the ability to place themselves in our shoes that leads to the false assumptions and misunderstandings in the first place, correct?

So, take off your judgey face…
judgey face

(This is your judgey face.)

…and take some time to reflect.

If there are people out there who seem to think that they know what is best for you, what you should be doing instead of what you are doing, or simply can’t seem to believe or understand a situation you are going through, perhaps if we try to see things from their point of view, not only will we understand them better, but we might just set a great example as to how they should try to see things as well.

So, problem solved. Right?

Wrong.

Unfortunately, the judgement doesn’t stop here. Presumptuous expectations seem to reach on into the fictional world as well.

No?

Oh, come on. Admit it, you judge the actions of every fictional character you read about. In fact, I’m willing to bet you might just be judging this post right now. You’re probably silently judging the author as well, thinking to yourself “Well, why would they say that?” or in a book, “I could have come up with a different ending that suited the story better.”

And you know what, you’re right. You probably could have. The great thing about fiction and novels is that they tell a story, a complicated story, from one person’s perspective. Now if that same story were told by another author, one with different life experiences than the first, the story might take place differently.

This is what is absolutely wonderful about books! That one can tell the same story that a million other authors have already told, yet it will be different and unique, set apart from all the others. This is also what connects fiction to real life.

In Riverbend, I have a character, Lena, who struggles endlessly with grief and trust. Some readers love her character while other have left reviews complaining about her being too weak or “whiney”.

Well, guess what?

We aren’t all Lara Croft from Tomb Raider, ok? Some women are weak at times. Some people are vulnerable. Not every woman is some super human, kick butt chick who doesn’t care about anything.

I am already prepared for the opinions I will receive about Avery from my WIP, To Be Loved. She is young, confused, and well, let’s just say kind of an idiot. But isn’t that the whole point? That we are all kind of an idiot at some point in time? That we find our way through life and we enjoy reading about characters who must do the same?

I hope so. I hope there isn’t an entire group of people out there who have it all figured out, have all the answers, and here I am left out in the cold.

Anyway, back to the point. Some readers don’t like that my character Lena is vulnerable and confused. But I’m willing to bet that all has to do with their perspective on life. Try not to take it to heart when a reader doesn't unconditionally love one of your characters. The judgements they make actually greatly reflect their personality. Which is really kind of cool. Because that means that somehow, our writing has brought a part of that reader’s personality to light and in print on our book pages.

Yeah, I think that’s kind of neat.

But hey, that’s just my perspective.

Tempting Tuesdays ~ Chicken Alfredo Rollups

This week we are taking lasagna, changing the color, and rolling it up. Get out your favorite Alfredo sauce and make some of these scrumptious rollups.

This recipe is adapted from a recipe on MMM... Cafe.

Ingredients

9 lasagna noodles
2 ½ cups alfredo sauce
2 cups cooked, shredded chicken
oregano
garlic salt
2
cups shredded Mozzarella, or cheese of your choice

Spray an 8x8 inch pan with cooking spray and spread 1/2 cup of Alfredo sauce on the bottom of the pan.

Cook your Lasagna noodles until they are al dente. Tip: Add 2 Tablespoons of Olive Oil to your water before you boil to prevent sticking and breakage.

Hopefully, most of your noodles will make it out in one piece.

Spread 2 Tablespoons of Alfredo Sauce on each noodle. Sprinkle desired amount of oregano and garlic salt on top of sauce.

Add 1/9 of your chicken to each noodle. Top with approx. 2 Tablespoons of cheese to each noodle.

Start at one end and roll up each noodle. Place in pan seam side down.

Pour remaning sauce over rollups then cover with remaining cheese. Bake at 350 degrees for 30 minutes or until cheese is melted.

If for some reason your Lasagna noodles break and you aren't able to roll them up, don't fear. Just make 3 layers like you would regular Lasagna with noodle pieces.

Writing & Publishing Tips

So, you're in a slump. Now what?

Get over it!

Yes, you heard me correctly.

Get. Over. It.

I’d like to expand a bit on last week's post about callings in life. Some of us feel like we have to have a goal or be actively working towards something to be of any real value. So, what do we call it when we are stuck in between interests with no idea what to do next?

That’s right, it’s a slump.

Those of us in the writing world might call it writer’s block. Some call it lazy, others call it a lack of motivation. No matter which way you slice it the next course of action remains the same…get over it.
As I discussed yesterday, many of us have many interests and potentials. We need not be limited by society’s expectations that we remain on one long and tedious path our entire lives. So, now that that’s established, let’s say we realize that and still don’t seem to have a concrete direction to go in.

That’s ok. I feel like this all the time.

In fact, I feel like this right now. I have been drilling away at my new book for months and months. Despite being rewritten, edited, and ready to go I haven’t been able to get past the feeling that something is missing. Quite frankly this is driving me absolutely crazy. I can’t stand it. I need to feel like I am working. And right now, I am not. So, I'm in a slump.

But after my post last week about being free from the grind of expectations and careers, I realized something. When I wrote my first novel, Riverbend, I wasn’t working toward a goal. In fact, I wasn’t working at all! I was playing around with different ideas and interests and it just sort of transformed into this book. So, perhaps I don’t need to put pressure on myself to do something of value?

I also realized something else, that I need to get over my slump. The only way to do that is to keep going. So, here I am writing a post about being in a slump to try and get myself out of my current slump!

To effectively get over it , I need to be creative. Whether I am blogging, writing, or even starting a new project. I simply have to trust that the idea will come and most likely not while I am staring blankly at a manuscript.

I can’t even believe how picky I have been with To Be Loved. I feel sure that missing "something" will strike my mind, but it won’t happen while I am sitting around feeling slumpy. (Yeah, that's a new word I've invented.).

“Inspiration exists, but it must find you working.”

Or in my case, just playing around. Still, something is better than nothing, right?

What tactics do you use to raise yourself up when you’re in a slump? How do you get over it?

Tempting Tuesdays ~ Sweet and Spicy Bacon Chicken

Want a way to spice up the chicken you have sitting in your fridge? This recipe is simple and delicious. The bacon lover in me could not wait to try this out and I was in no way disappointed with the results.

Ingredients

8 skinless chicken breasts
1 package of Thick Cut Bacon
1 cup of brown sugar
1 Tablespoon of salt
1 Teaspoon of garlic powder
1 Teaspoon of black pepper
1 Teaspoon of chili powder or chipotle powder

Mix together salt, pepper, garlic powder, and chili or chipotle powder.

Prepare your chicken. I cut each of my chicken breasts in half. Portion Control!

Sprinkle your spices on both sides of your chicken.

Wrap bacon around your chicken. I cut the bacon slices in half down the middle since I cut my chicken into smaller pieces.

Roll your bacon wrapped chicken in brown sugar.

Place your bacon wrapped chicken in a 9 x 13 inch pan.

Bake at 400 degrees for 35 minutes.

For a complete meal, enjoy with a baked potato and your favorite veggies!

The Wednesday Word

Wednesday Word

Author To Author’s Newsletter

January 8, 2014

Author to Author would like to wish a very healthy and happy

New Year to our followers!

Writing & Publishing Tips

Since the new year has begun, I felt this article would be appropriate for the first edition of The Wednesday Word for 2014. Many of us have made (...and broken) a New Year's resolution. Perhaps it was something small or perhaps it was something huge like renewing a commitment to something that just doesn't interest you anymore. Whether it be a hobby, your writing, expectations, or your career. Either way...this short article might clarify exactly why you just shouldn't worry about it.

What if you don't have a calling?

What if you have 5? Or 10? Perhaps 50?

I read an interesting article about multi-potentiality yesterday and for the first time in my life I thought- Yes! I AM normal!

My entire life people have wanted an answer to things like:

What do you want to be when you grow up?

What area interests you?

What career would you like to pursue?

What industry fits your personality?

Well, I finally have an answer to these questions…

All of them.

Why should we limit ourselves to one thing? Is it really that important to spend our lives trying desperately to achieve success in one area? Or to master one particular skill? Then what?

Oh yeah, that’s it. Because now you’re dead and gone from this world and there is nothing left for you to do here.

Here is a short list…well, as short as possible, of my past and present interests and careers starting in college years and onward.

Receptionist
Barista
Office Manager
Community Coordinator for individuals with disabilities.
Nurse.
Crafter
Author
Blogger
Picker/Resale

See a correlation?

No?

Good, because neither do I! But for the first time ever I see that it is perfectly fine.

If asked, I suppose I would say that I love working in a setting where I can reach out and help others, but even that would sell my subconscious need for infinite knowledge and experiences short.

To be quite honest, I think I just love “new”. I love to learn. I love to feel like I am making a difference. I love to aquire new skills, use them, and then move on. Sometimes I stick with it and sometimes I don’t. And that’s ok too. That doesn’t make me a quitter or a failure. Know what it does make me?

An explorer.

An explorer of life. If I could go back to when my mother first asked me what I wanted to be when I grew up, that would be my answer, and that, my friends, makes me a success. I have become what I wanted to be. And because of that I will have many experiences and be on many different paths.
I have found writing to be a path I know I will stick with. It never gets boring and my mind is always flooding with new and exciting ideas. It frees my mind, it frees me…did you hear me?

I AM FREE.

Society’s expectations of me and what everyone thinks is normal will never hinder me again. Don’t let it hinder you.

So, how about it? What things do you want to be when you grow up?

In what ways do you find time to devote to all of your interests?

Tempting Tuesdays ~ Simple Shepherd's Pie

Now that the holiday season has passed, it is time to get back to basics. A good, healthy meal the whole family can enjoy. This Simple Shepherd's Pie combines meat, veggies, and cheese, and can be on your table in less than 30 minutes.

Ingredients

3 cups of mashed potatoes (Can be homemade or instant)
1 pound of browned ground beef
1 can of corn
2 cups of shredded cheese (I used a combination of Colby and Jack, but Cheddar works too)

This recipe is all about the layers. In your normal Shepherd's Pie, the mashed potatoes go on top. This is where I put a little twist on things.

Spread your mashed potatoes on the bottom of your casserole dish for your bottom layer.

Next, layer your browned ground beef. You can add salt, pepper, or spices to your beef before adding if you wish.

Then open your can of corn and layer it over your beef.

Finally, sprinkle your shredded cheese on top.

Pop in your oven at 375 degrees for 10 minutes or until cheese is melted.

A delicious, easy dinner that even the kids will love. A snap to fix which will give you more time to get back to that book you were reading.
