Tempting Tuesdays ~ Homemade Carmel Popcorn


This week, we have a yummy recipe that can be made on the fly with ingredients most people have in their cabinets everyday. Whether you're getting ready to curl up with your favorite book or having an impromptu get together, this Carmel Popcorn is a quick and easy treat.

This recipe is adapted from I'm A Lazy Mom.

Ingredients


2 bags of microwave popcorn
1 cup of packed brown sugar
1/4 cup of light corn syrup
1/2 cup of butter






First, pop your popcorn and place it in a bowl.


In a large sauce pot, combine and heat butter, corn syrup, and brown sugar over medium heat. Stir occasionally with spatula or spoon.


Get it to this point where it's nice an bubbly. Leave alone for 5 minutes. Do not stir!
While it is bubbling, place sheets of wax paper on your counter top to set your corn on after it's combined with your carmel. If you are like some of us and are out of wax paper, some plastic bowls will do in a pinch.


When your 5 minutes are up, remove carmel mixture from heat and add popcorn by the handful. Stir after every few handfuls and make sure you don't add any of the un-popped kerrnals. I know it might look like a lot of popcorn, but you need to use it all. If you don't, you might get large clumps of carmel and some very sticky pieces.


Once you've stirred to your heart's content, separate your carmel popcorn onto your wax paper or plastic bowls. Break it up into manageable pieces and let it cool for a few minutes.


There you have it! A large bowl of salty and sweet goodness ready for any occasion.
