I'm twisting the traditional once again. This take on the classic Chicken Parmesan will take you only 30 minutes to put on your dinner table and feed the hungry brood you have waiting for it.
Ingredients
4 boneless, skinless chicken breast halves
1/2 cup of mayonnaise (you can substitute with sour cream or low-fat plain yogurt)
1/4 cup grated
4 Tablespoons of Italian seasoned dry bread crumbs
Mix mayonnaise and Parmesan cheese together.
Arrange chicken in a 9x13 in pan.
Spread mayonnaise and Parmesan mixture over each piece of chicken.
Sprinkle 1 Tablespoon of breadcrumbs over each piece of chicken.
Bake for 20 minute at 425 degrees.
I served this with a slice of Garlic Texas toast. Add your favorite veggies for a complete meal in just a half hour.
