Tempting Tuesdays ~ Donut Muffins


I am finally getting around to the recipe I mentioned in the very first Tempting Tuesdays post. These Donut Muffins were almost a character themselves in "Kissing Kendall" by Jennifer Shirk. I could kick myself a hundred times for not trying these sooner. They are so easy. I had everything on hand without having to make an extra trip to the store so that was a big plus. Also they are the delicious, melt-in-your-mouth kind of muffins. Give them a try and read "Kissing Kendall".


Muffins:

1 ¾ cup flour
1 ½ teaspoon baking powder
½ teaspoon salt
½ teaspoon cinnamon
1 teaspoon vanilla
1/3 cup oil
¾ cup sugar
1 egg
¾ cup milk

Topping:

½ cup melted butter
1/3 cup sugar
1 tablespoon cinnamon

Preheat oven to 350 degrees. Whisk flour, baking powder, salt, and cinnamon together in a bowl. 


In a separate larger bowl, combine oil, vanilla, sugar, egg, and milk.


Add the dry ingredients to the wet ingredients. Mix just until all combined.

Spoon batter into prepared pan- either a lightly greased muffin tin or paper muffin cups.


Bake for 15-20 minutes.




Remove muffins from pan while still hot.

For the topping, melt butter in one bowl and mix cinnamon and sugar in another.


Dip muffins in melted butter. Then roll muffins in sugar mixture.

Serve warm or cool on rack.

Makes 8 to 12 muffins.
