It had come to my realization this week that I have yet to make anything with strawberries. With Cinco de Mayo just yesterday, I was longing for a taste of my favorite Mexican import, Tequila. BAM! I find this recipe that combines both.
This recipe has been adapted from Real Housemoms.
Ingredients
Cupcakes
1 box dry white cake mix
2 .30 oz dry sugar free strawberry jello mix
3/4 cup bottled strawberry margarita mix
1/3 cup vegetable oil
1/2 cup tequila
3 eggs
Frosting
8 oz cream cheese, softened
1/2 cup butter, softened
2 1/2 cup powdered sugar
2 tbsp tequila
Instructions for Cupcakes
Preheat your oven to 350 degrees and prepare you muffin tin with liners. (20-24 cupcakes)
Beat all cupcake ingredients in mixer on low for about 30 seconds. Scrape the bowl then continue to mix at medium speed for about 2 minutes.
Fill liners 2/3 full with batter.
Bake 15-18 minutes or until a toothpick comes out clean. Cool for 10 minutes in the pan then remove to cool completely before frosting.
Cream together butter and cream cheese until smooth.
Add 1 cup powdered sugar and 1 tbsp of tequila. Beat on medium speed.
Add remaining 1 1/2 cup powdered sugar, and 1 tbsp tequila and beat until smooth.
Refrigerate frosting for 1-2 hours or until firm enough to frost cupcakes.
Frost cupcakes. Sprinkle with additional sugar and add a slice of strawberry if you like.
