Tempting Tuesdays ~ Simple Shepherd's Pie

Now that the holiday season has passed, it is time to get back to basics. A good, healthy meal the whole family can enjoy. This Simple Shepherd's Pie combines meat, veggies, and cheese, and can be on your table in less than 30 minutes.

Ingredients

3 cups of mashed potatoes (Can be homemade or instant)
1 pound of browned ground beef
1 can of corn
2 cups of shredded cheese (I used a combination of Colby and Jack, but Cheddar works too)

This recipe is all about the layers. In your normal Shepherd's Pie, the mashed potatoes go on top. This is where I put a little twist on things.

Spread your mashed potatoes on the bottom of your casserole dish for your bottom layer.

Next, layer your browned ground beef. You can add salt, pepper, or spices to your beef before adding if you wish.

Then open your can of corn and layer it over your beef.

Finally, sprinkle your shredded cheese on top.

Pop in your oven at 375 degrees for 10 minutes or until cheese is melted.

A delicious, easy dinner that even the kids will love. A snap to fix which will give you more time to get back to that book you were reading.
