Tempting Tuesdays ~ Kitchen Sink Baked Chicken


I know you are probably wondering what the heck a kitchen sink has to do with making chicken. Well . . . let me explain.

My family are avid YouTube watchers. There are several cooking and baking series that are posted that my daughter and I love. Low and behold, one day my husband calls me over to his computer to look at Auntie Fee's Baked Chicken video. I watched it. Auntie Fee's very colorful language and all. The thing is, it is a really good idea. You cook the chicken while it is still frozen to keep in all the moisture. The idea of mixing it all in the kitchen sink put me off at first, but we cleaned our sink throughly and decided to give it a go. After the first time, we decided when we make baked chicken, this is how we will do it. So, go clean your kitchen sink and let's get to it.

Ingredients for recipe as shown

2.5 pounds frozen bone in chicken

Liberal amounts of the following:

Season Salt
Black Pepper
Garlic Powder
Paprika
Dried Parsley
Dried Mustard
Thyme
Cumin
Flour

1 Diced Green, Red, or Yellow Pepper
1 Medium Sized Onion

4 Tablespoons Butter


Chop up your peppers and cut your onion in fourths.


Line up all your seasonings next to your sink so you can reach them when needed.


Place chicken in clean sink and rinse.


Liberally dash on all your seasonings.


Get your hands in there and mix it all up until each piece is throughly coated.


Place chicken in 9x13 pan with onions and peppers. Cook at 350 degrees uncovered for and hour, then check every 30 minutes until cooked through. This recipe took 2 hours. Enjoy!

Tempting Tuesdays ~ Cheesy Tater Tot Casserole


Need a simple, home cooked meal that the whole family will love? Then this recipe is for you. I found this as part of a weekly meal plan from Girls in White Dresses Blog. You can even spice it up with different seasonings or adding veggies if you like.

Ingredients

2 uncooked, thawed, and diced chicken breasts
1 bag tater tots
2 cups shredded cheddar cheese
1 cup milk
salt, pepper, and other seasonings as desired



Line the bottom of your crock pot with half of the bag of tater tots.


Add 1 cup of cheese then cover with diced chicken and seasonings.


Cover with remaining tater tots and cheese then add milk.


Cook on low for 4 hours and enjoy!

Tempting Tuesdays ~ Slow Cooker French Dip Sammies



Fall is creeping up on us and I wanted to pull out the slow cooker to fix up a tasty meal. I found this great game day recipe on Shugary Sweets to tempt you with this week.


Ingredients

5 pound Beef Rump Roast
1 tsp salt
1 1/2 tsp onion powder
2 tsp garlic powder
1/2 tsp black ground pepper
2 Tbsp beef bouillon granules
2 Tbsp minced onion
1 1/2 cup beef stock
12 oz beer

Place roast in slow cooker.


Season with salt, onion powder, garlic powder, pepper, beef bouillon, and minced onion.


Add broth and beer, cover and cook on low for 8 hours.



Take meat out and slice or shred it.

Strain au jus of clumps or fat or small pieces of meat. Serve on french bread with cheddar cheese and a side of au jus. Dip and enjoy!

Tempting Tuesdays ~ Crock Pot Cream Cheese Chicken Taquitos


It has been a while since I've made any type of Mexican food so I went hunting for an easy recipe. I found this recipe on Creme De La Crumb and I'm so glad I did. This was so easy and incredibly tasty. It works as a meal if you use the larger tortillas or as an appetizer if you use smaller ones. For this recipe shown, I used 6 burrito size flour tortillas.

Ingredients


  • 2 boneless skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • salt + pepper
  • 8 ounces cream cheese
  • ⅓ cup water
  • ½ cup shredded colby or Mexican blend cheese
  • 12 6 inch or 6 burrito size corn or flour tortillas
  • optional: cilantro, salsa, sour cream, or other toppings as desired


Add chicken, chili powder, garlic powder, cumin, salt, pepper, cream cheese and water to crock pot. Cover and cook 8 hours on low or 4 hours on high. I started this right after lunch and did it on high and it was ready for dinner.




Once cooked, shred chicken with two forks and stir. Cook for an additional 15 minutes.



Preheat oven to 400 degrees. Place chicken mixture in the center of the tortilla. (For smaller tortillas, use about 1/4 of a cup.) Top with shredded cheese and roll tight. 



Place on greased baking tray and cook for 5-10 minutes. Check periodically to make sure you don't burn the taquitos.

Serve with desired toppings and enjoy!

Tempting Tuesdays ~ Braided Calzone


This recipe was inspired by a picture I found on my Facebook feed. No recipe was attached so I just shot from the hip and tried it out. It worked out better than I ever could imagine. So easy and delicious.

Ingredients

1 can pizza dough
1/2 to 1 cup pizza sauce
1/2 to 1 cup shredded cheese (I used an Italian Blend)
Pepperoni and any other filling of your choice
1 egg for egg wash



Roll out pizza dough on baking tray or pizza stone. Use kitchen scissors to snip sides to make your braid pieces.



Spread sauce down the middle of the dough.



Add pepperoni or any other meat or veggies that you would like.



Sprinkle cheese on top.



Carefully place strips over the center to cover the filling by alternating the sides one by one.



Brush with egg wash and sprinkle with any seasoning you choose. I added a little garlic salt on this one.

Cook in 375 degree oven for 20 to 22 minutes. Keep an eye on it to make sure it doesn't burn.



Enjoy piping hot!

Tempting Tuesdays ~ Pineapple Ham Casserole


For a lighter version of an Easter dinner or a delicious spring time meal, this recipe adapted from Taste of Home will do the trick.

Ingredients

2 cups of uncooked noodles (suggest spiral or wide egg noodles)
3 tablespoons of butter (divided)
1 package (8 ounces) cream cheese
3/4 cup milk
2 cups of fully cooked ham, cubed
16 ounces of crushed pineapple
2 teaspoons of Worcestershire sauce
1/2 teaspoon salt
Dash of pepper
1/2 cup dry breadcrumbs or crushed cornflakes




Cook noodles according to package directions, then drain.



In large skillet, melt 1 tablespoon of butter. Add cream cheese and milk and stir until cheese is melted. Stir in noodles, ham, pineapple, salt, pepper, and Worcestershire.



Transfer to 9x13 baking dish. Melt remaining butter and toss with breadcrumbs or cornflakes then sprinkle over top. Bake uncovered at 350 degrees for 30-35 minutes.
