Tempting Tuesdays ~ Chicken Alfredo Rollups


This week we are taking lasagna, changing the color, and rolling it up. Get out your favorite Alfredo sauce and make some of these scrumptious rollups.

This recipe is adapted from a recipe on MMM... Cafe.

Ingredients

9 lasagna noodles
2 ½ cups alfredo sauce
2 cups cooked, shredded chicken
oregano
garlic salt
2
cups shredded Mozzarella, or cheese of your choice

Spray an 8x8 inch pan with cooking spray and spread 1/2 cup of Alfredo sauce on the bottom of the pan.

Cook your Lasagna noodles until they are al dente. Tip: Add 2 Tablespoons of Olive Oil to your water before you boil to prevent sticking and breakage.

Hopefully, most of your noodles will make it out in one piece.



Spread 2 Tablespoons of Alfredo Sauce on each noodle. Sprinkle desired amount of oregano and garlic salt on top of sauce.



Add 1/9 of your chicken to each noodle. Top with approx. 2 Tablespoons of cheese to each noodle.



Start at one end and roll up each noodle. Place in pan seam side down.



Pour remaning sauce over rollups then cover with remaining cheese. Bake at 350 degrees for 30 minutes or until cheese is melted.




If for some reason your Lasagna noodles break and you aren't able to roll them up, don't fear. Just make 3 layers like you would regular Lasagna with noodle pieces.
